Ingredients
- Pressed cottage cheese: 1.1 lb (500 gr)
- Sour cream: 3.5 oz (100 gr)
- 3 eggs
- Salt: a pinch
- Lemon zest
- Stevia: 4 packets
- Powdered sweetener: 1/2 oz (15 gr)
- Vanilla: 1 teaspoon
- Raisins: 1 oz (25 gr)
- (Optional) almond flour or coconut flour: 2 oz (50gr)
How to make
- Put the following ingredients in a mixer:
- Cottage cheese
- Sour cream
- Eggs
- Salt
- Lemon zest
- Stevia
- Vanilla
- Raisins
- Mix them well
- Add the almond flour into the mixer
- Mix everything well
The cheese pie
- Place 3/4 of the mix in a 7.5” x 7.5” tray (19 cm x 19 cm)
- Smooth out the mix to get an even height in the tray
- Bake at 400 F (200 C) for 25 minutes
- Remove from the oven and powder with natural sweetener
- Cut the pie in large squares
The donuts
- Use the remaining 1/4 of the mix
- Use a flat tray and line
- Shape the donuts using a bit of water
- Bake (or fry) them for 15-20 minutes at 400 F (200 C)
- When done, powder them with natural sweetener
