Carrot Cake

Ingredients

  • 4 eggs
  • Stevia (natural sweetener): 5 packets
  • Salt: 1/2 tsp
  • Sour cream: 1 cup (1/2 cup for layers and 1/2 cup for the cream)
  • Baking powder: 1.5 tsp
  • Vinegar: 1/2 tsp
  • Coconut flour: 3 tsp
  • Almond flour: 1 cup (120 gr)
  • Lemon and orange zest
  • Chopped carrots: 1 cup (150 gr)
  • Chopped pecans: 1/2 cup (65 gr)
  • Cream cheese: 8 oz (225 gr)
  • Coconut cream: 1/2 cup
  • Powder sweetener: 1/4 cup (for the cream)
  • Vanilla

How to make

The cake layers

  • Put the eggs, the sweetener and the salt in a bowl
  • Mix well
  • Add half of the sour cream
  • Mix the baking powder with the vinegar in a small cup
  • Add it to the bowl and mix some more
  • Add the coconut flour and keep mixing
  • Add the lemon and the orange zest
  • Add the chopped carrots
  • Add the chopped pecans
  • Mix everything well
  • Pour the mix in a 8” (20 cm) round tray lined with parchment paper
  • Bake for 35-40 mins at 350 F (175 C)

The cream

  • Put the cream cheese in a large bowl
  • Add the remaining half of the sour cream
  • Add the coconut cream
  • Add the powder sweetener and the vanilla
  • Add a pinch of salt
  • Mix until everything becomes smooth and creamy
  • Put the mix in a bowl

Putting it all together

  • When the cake are baked, remove the tray from the oven and let them cool in the tray for 10 minutes.
  • Cut the cake into 2 layers.
  • Spread half of the cream evenly on the first layer
  • Add the second layer on top of the cream
  • Spread the remaining cream on top of the second layer
  • Garnish with carrots and pecans
  • Allow the cake to chill until it’s ready to be served
