“Snow White” is a traditional Eastern European cake usually made around Christmas. My particular take on this recipe replaces some of the original ingredients with healthier ones, while preserving its exquisite taste.
The cake is so soft and delicious, every bit melts in your mouth!

Ingredients
This recipe uses simple and clean ingredients - no gelatin, no corn starch, no cream of tartar, no artificial thickener.
- Pack of 38 biscuits
- Cream: 1 liter (1.76 pint) coconut milk (drained of water)
- 2 Tbsp chia seeds (soaked in water for couple minutes)
- 1 lemon
- 3 stevia sachets or any other natural sweetener
- Orange peel
For decoration:
- Raspberries
- Coconut flakes
How to prepare
- After draining the water, put the coconut cream into a mixer.
- Soak the chia seeds in water (this is a gelatin substitute).
- Add the lemon juice.
- Add the orange zest.
- Add the stevia or any other natural sweetener.
- Mix everything until it becomes a thick cream.
- Put the mix in a bowl.
- Line a 8” x 8” (21cm x 21cm) tray with parchment paper.
- Put a layer of biscuits and then a layer of cream.
- Continue with another layer of biscuits and cream - until you get 4 layers of biscuits and 4 layers of cream.
- At the end, add the coconut flakes.
- Cover with cling wrap and refrigerate for 24 hours.
- After 24 hours, remove from the tray and cut into cubes.
Arrange everything in a beautiful box and give it to your loved ones!
