Pumpkin Soup in 30 Minutes

If you’re like me, you may have have some leftover pumpkins from Halloween. Don’t throw them away - you can make a really delicious soup out of them!

Pumpkin Soup Plate

Ingredients:

  • 1.3lb / 600gr pumpkin (remove the peel)
  • 2 onions
  • 2 garlic cloves
  • 2 carrots
  • 4 sticks of celery
  • 3 Tbsp of lard
  • salt

How to make

  • Put all the ingredients in a pressure cooker.
  • Add water up the sign on the inner pot (depends on your pressure cooker type).

  • Cook for 30 min with the release valve in the “closed” position. This will make sure the soup retains the flavor from all the ingredients.
