Ingredients
Cupcakes
- 3 eggs
- butter: 62 ml (1/4 cup)
- grated carrots 100gr (1cup)
- baking powder: 5 gr (1tsp)
- lemon juice: 1tsp,
- lemon zest: 3 tsp
- stevia: 2 packets (2 tsp)
- cinnamon: 1 tsp
- coconut flour: 2 tbsp
Frosting
- cream cheese: 200gr
- butter: 62 ml (1/4cup)
- powder sweetener: 85gr
- coconut milk or HWC: 50ml
- red color from beets
How to make
Cupcake base
- Put the cupcake ingredients in a bowl.
- Mix well.
- Bake for 15-20 min at 375F (190C).
Frosting
- Put the cream cheese and the butter in a bowl.
- Mix them well for 5 minutes using a mixer.
- Gradually add the powder sweetener.
- Add the vanilla.
- Optional: add the coconut milk or HWC.
Decorate the cupcakes according to taste. They should be moist, sweet and yummy!
