Keto Carrot Cupcakes

Ingredients

Cupcakes

  • 3 eggs
  • butter: 62 ml (1/4 cup)
  • grated carrots 100gr (1cup)
  • baking powder: 5 gr (1tsp)
  • lemon juice: 1tsp,
  • lemon zest: 3 tsp
  • stevia: 2 packets (2 tsp)
  • cinnamon: 1 tsp
  • coconut flour: 2 tbsp

Frosting

  • cream cheese: 200gr
  • butter: 62 ml (1/4cup)
  • powder sweetener: 85gr
  • coconut milk or HWC: 50ml
  • red color from beets

How to make

Cupcake base

  • Put the cupcake ingredients in a bowl.
  • Mix well.
  • Bake for 15-20 min at 375F (190C).

Frosting

  • Put the cream cheese and the butter in a bowl.
  • Mix them well for 5 minutes using a mixer.
  • Gradually add the powder sweetener.
  • Add the vanilla.
  • Optional: add the coconut milk or HWC.

Decorate the cupcakes according to taste. They should be moist, sweet and yummy!
