Ingredients:
- Coconut milk: 400 ml
- White chia seeds: 2 tbsp (20 gr)
- Flax meal: 1.5 tsp (5 gr)
- Ground walnuts: 1/3 cup (40 gr)
- Salt: a pinch (2 gr)
- Stevia sweetener: 2 sachets (4 gr)
- Coconut flakes: 3.4 cup (60 gr)
- Sugar-free jam (ex: blueberry jam)
How to make
- Put the coconut milk in a deep pan, on low heat
- Add the chia seeds
- Mix well to prevent lumps from forming
- Add the flax meal and the ground walnuts
- Add the pinch of salt and the sweetener
- Mix everything well
- When it starts to boil, remove from heat
- Line a cutting board (10” x 12”) with cling wrap
- Sprinkle the coconut flakes on the cling wrap
- Pour the mix on top, in a thin layer
- Spread it evenly on the whole surface
- Cover it with the edges of the cling wrap and put it in the freezer
- After 10 minutes, the mix should harden
- Spread the jam on top
- Cut the mix into 4 squares
- Roll everything using the cling wrap
- Cut each rolled piece in 2 and put them on a plate
- Decorate with berries
