An excellent New Year’s Eve dessert ready in a few minutes. No oven needed, no condensed milk, no gelatine, no flour. It doesn’t contain eggs or baked goods. A healthy, quick, simple and delicious cake recipe.

Chocolate Cheesecake

Ingredients:

Crust

  • Almond flour: 4.2oz / 120gr
  • Ground walnuts: 1oz / 25gr
  • Swerve: 1oz / 25gr
  • Butter: 3oz / 85gr
  • Cinnamon
  • Salt

Cream

  • Full fat cream cheese 17.5oz / 500gr
  • Coconut cream 500ml (or heavy cream)
  • Swerve 4.4oz / 125gr
  • Dark chocolate 1.80z / 50gr (or cocoa)
  • Lemon juice (1/2 lemon)
  • Lemon zest

Decoration (optional)

  • Ground walnuts or pecans
  • Cream
  • Melted chocolate

How to make

Bottom layer

  • Mix the dry ingredients: almond flour, ground walnuts, natural sweetener, cinnamon and salt.
  • Afterwards, add the melted butter.
  • Mix everything and put them in a pan greased with butter.
  • Spread the mix well in the pan with a spoon and then refrigerate.

The cream

  • Put in a mixer: cream cheese, Swerve (or any natural sweetener), coconut cream (or other heavy cream), lemon juice, lemon zest.
  • Mix everything for a couple of minutes.
  • If the mix is too thick, add more coconut cream.
  • When the cream is ready, divide it into two bowls.
  • Add some melted chocolate in one bowl and mix it with the cream. It should look like chocolate cream.

The cake

  • Add the first layer of chocolate over the cold crust you refrigerated earlier.
  • Then, add another layer of cream.
  • Decorate with chopped walnuts and melted chocolate.
  • Add more decorations according to taste.
  • Put it in the fridge for at least 3 hours.

The New Year’s dessert is ready! And since it’s the ultimate low carb dessert, you can enjoy it guilt free!
